Creamy Mashed Potatoes with Greek Yogurt and Roasted Garlic

– 4 large russet potatoes
– 1/2 cup Greek yogurt
– 4 cloves of roasted garlic*
– 2 tablespoons unsalted butter
– 1/4 cup whole milk
– Salt, to taste
– Freshly ground black pepper, to taste
– Optional garnish: chopped fresh chives or parsley

*To roast garlic cloves, preheat your oven to 400°F (200°C). Cut off the top 1/4 inch of a full head of garlic to expose the cloves. Drizzle with olive oil, wrap it loosely in aluminum foil, and place it in the oven for about 40 minutes. The cloves should be soft and golden when done.
