Thanksgiving Table
Legend has it that the origins of Sweet Potato Casserole can be traced back to the early 1900s when a creative cook decided to combine the natural sweetness of sweet potatoes with a buttery and crunchy topping. The resulting dish was an instant hit, becoming synonymous with comfort and togetherness during festive gatherings.

Ingredients:

  • 4 large sweet potatoes, peeled and cubed
  • ½ cup butter, melted
  • ½ cup brown sugar
  • ⅓ cup milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • Topping:
  1. 1 cup pecans, chopped
  2. ½ cup all-purpose flour
  3. ½ cup brown sugar
  4. ¼ cup butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large pot, bring salted water to a boil. Add the sweet potato cubes and cook until tender. This usually takes around 15 minutes.
  3. Drain the cooked sweet potatoes and transfer them to a mixing bowl.
  4. Mash the sweet potatoes until smooth, then add melted butter, brown sugar, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt to the mixing bowl.
  5. Using an electric mixer, blend all the ingredients until well combined and velvety.
  6. In a separate bowl, combine the chopped pecans, all-purpose flour, brown sugar, and melted butter for the topping mixture. Stir until it forms a crumbly texture.
  7. Transfer the sweet potato mixture into the greased baking dish, spreading it evenly.
  8. Sprinkle the pecan topping over the sweet potato mixture, covering it completely.
  9. Bake in the preheated oven for 25-30 minutes until the casserole is hot and the topping is golden brown and crispy.
