– 2 tomatoes, chopped
– 1 teaspoon garam masala

Step-by-Step Instructions

Step 1: Preparing the Rice

1. Rinse the basmati rice under cold water until the water runs clear.
2. In a large pot, add the rinsed rice, water, cloves, green cardamom pods, bay leaf, cinnamon stick, and salt.
3. Bring the water to a boil and cook the rice until it is 70-80% cooked. This should take about 8-10 minutes. Be careful not to overcook the rice as it will be cooked further during the dum process.

Biryani Ingredients

Step 2: Marinating the Meat

1. In a bowl, mix together the plain yogurt, ginger paste, garlic paste, chili powder, turmeric powder, and salt.
2. Add the chicken or mutton pieces to the marinade and mix well until all the pieces are coated.
3. Allow the meat to marinate for at least 1 hour, or preferably overnight in the refrigerator. This will help the meat tenderize and absorb the flavors.

Step 3: Cooking the Biryani

1. Heat ghee or oil in a large, heavy-bottomed pot over medium heat.

3. To the remaining onions in the pot, add the marinated meat and cook until it is browned and cooked through. This should take about 10-12 minutes.
4. Add the chopped tomatoes and cook until they have softened and become mushy.
5. Sprinkle the garam masala over the meat and mix well.
6. Reduce the heat to low and layer the par-cooked rice over the meat, spreading it evenly.
7. Sprinkle the fried onions reserved for garnish over the rice.
8. Cover the pot with a tight-fitting lid and cook the biryani on low heat for 25-30 minutes. This slow cooking process allows the flavors to meld together and for the rice to fully cook through.
9. Once cooked, remove the pot from heat and let it rest for 5-10 minutes before uncovering. This will allow all the flavors to further develop and settle.

Serving and Variations

1. Garnish the biryani with freshly chopped coriander leaves.
2. Serve the biryani hot with raita (yogurt sauce) or a side of cucumber salad for a refreshing contrast.
3. For a vegetarian variation, replace the meat with mixed vegetables like carrots, peas, and bell peppers. You can even use paneer (Indian cottage cheese) or tofu for a protein-packed option.
4. If you prefer a spicier biryani, add more red chili powder or freshly chopped green chilies to the marinade.
5. Ensure each layer of rice is evenly distributed, allowing for consistent flavor throughout the biryani.
