The Ultimate White Chicken Chili Soup Recipe

As the winter chill settles in, there’s nothing quite like a warm and comforting bowl of soup to soothe the soul. And one of my all-time favorites is the White Chicken Chili Soup. This delightful dish blends the flavors of tender chicken, creamy broth, and zesty spices to create a truly spectacular culinary experience.


  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 2 cans (14.5 ounces) of white beans, drained and rinsed
  • 1 can (4 ounces) of diced green chilies
  • 4 cups of chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup heavy cream
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack cheese (for garnish)
  • Tortilla chips (for serving)


  1. Start by cooking the chicken breasts. Heat the olive oil in a large pot over medium heat. Add the chicken breasts and cook until they are no longer pink in the center, about 6-8 minutes per side. Remove the chicken from the pot and set it aside to cool. Once cooled, shred the chicken using two forks.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.
  3. Add the shredded chicken, white beans, diced green chilies, chicken broth, ground cumin, dried oregano, chili powder, salt, and black pepper to the pot. Stir well to combine.
  4. Bring the soup to a simmer over medium-low heat. Let it simmer for 20-25 minutes to allow the flavors to meld together.
  5. After simmering, stir in the heavy cream. Let the soup cook for an additional 5 minutes.
  6. Remove the pot from the heat. Serve the White Chicken Chili Soup hot, garnished with fresh cilantro and shredded Monterey Jack cheese. Accompany it with some tortilla chips for added crunch and enjoyment.
